This is my favourite white grape as it's all about the complexity and reductive notes achieved through natural fermentation. Made from the Gingin clone, it's a very difficult clone to work with, however as with most things we do it's the difficult things that produce the best result.

White flowers, ginger, nectarine, hazelnuts, verbena and Pecorino rind
Taut, mid-palate interplay with flavours attempting to escape, and the acid holding everything in

Goes with: 
Salt-baked chicken with roasted kipflers in olive oil and rosemary.
